This is a fairly classic observation: It is very difficult, if not impossible, to cook (well) without good utensils and good equipment.
This is something that everyone tends to neglect, especially at the beginning, but make no mistake about it, you absolutely need good utensils to be able to achieve the result you hope for with this or that recipe. A person can find various products online at discount home improvement supplies online.
This page presents the main utensils you may need throughout the recipes:
· Scales
· Balance
· It allows you to weigh everything, even small quantities, 10/20 grams or sometimes less.
If you must buy:
A scale, to be practical and precise, must be electronic. You must therefore avoid mechanical models which are not worth much: imprecise (20 gram slice), inappropriate for small quantities (minimum 80 grams) and other disadvantages. An electronic will bring you the desired precision (to the nearest gram sometimes), and the happiness of the automatic tear, which saves you a lot of dishes since by pressing a button your scale starts weighing again from zero.
Maryse
It is a rubber spatula, ideal for stirring a preparation that risks sticking to the bottom of the pan or for emptying a salad bowl or a pan without losing any of its contents.
If you must buy:
Take it with a very rigid plastic handle that you will have well in hand. The ideal would be to have two, one small and one large and can be found at discount home improvement supplies online.
Whip
To be able to whip a preparation (like a sabayon for example) in order to mix it well and especially to incorporate air into it.
If you must buy:
Take a stainless one, big enough, with a stainless handle too, or a big enough plastic one. We must hold it well in hand, if the handle is too thin it will not work.
Brush
Coat with a preparation, for example beaten egg yolk, puff pastry so that it is golden brown when cooked, or to remove excess flour or sugar.
If you must buy:
Take two, one small and one bigger, with plastic handles and "special kitchen" bristles (which can go in the dishwasher).
Pliers
For flipping, easily grabbing stuff that's cooking (like apple wedges), pulling out something hot, or just serving spaghetti.
If you must buy:
Take a completely metallic and stainless one.
Cutting board
For cutting, chopping, peeling, chopping, mincing, etc. And this in complete safety for your knives and your table or worktop.
If you must buy:
Take the large one, about 30X40 cm, and made of special food-grade plastic. Contrary to popular belief, a wooden cutting board (although very pretty) is not well suited: it is a nest for microbes when used, and it tends to "make sawdust" when you cut above.
